PLAYAS DE ROSARITO, B.C. — Sunday, September 6, 2026. The training and certification initiative of the Rosarito Craft Beer Development Program officially began this week with the workshop “Yeast Management,” an initiative led by the Consejo Consultivo de Desarrollo Económico de Playas de Rosarito (CCDER) with support from the Baja California Business Trust (FIDEM).

The first workshop took place on September 2 and focused on one of the fundamental components of the brewing process: proper yeast management and its role in healthy fermentation and overall beer quality.

Participants explored topics including selecting the appropriate yeast for different beer styles, proper handling and storage to maintain yeast viability, as well as procedures for safe reuse and performance monitoring.

César Rivera González, President of CCDER, noted that the program is designed to strengthen the professional development and competitiveness of Rosarito’s craft beer industry. He emphasized that this first workshop marks the beginning of a training initiative specifically designed around the needs of local producers and focused on knowledge that can be applied directly within their businesses.

“With the launch of these training sessions, we are putting into practice a strategy developed hand in hand with local producers. Our goal is for each workshop to provide knowledge and tools that participants can apply directly to their operations, helping improve product quality, professionalize their businesses and strengthen the competitiveness of Rosarito’s craft beer industry,” Rivera González said.

The training and certification program was developed in coordination with local producers during a working session that included representatives from Delliotts, La Termo, Tinta Negra, Cervecería Los Reyes and Sadrac Casquera Brews.

Together with the technical team designated by CCDER, participants reviewed the activity schedule, training dates and key topics that will make up the program.

The initiative was designed around needs identified directly by the industry and includes training focused on improving technical production quality, strengthening beer evaluation skills, enhancing operations and service, and developing tools for better business management, marketing and market positioning.

Topics included in the program are:

  • Beer tasting and sensory evaluation
  • Identification of off-flavors
  • Food and beer pairing
  • Draft systems
  • Professional beer service
  • Brewing ingredients
  • Recipe development
  • Yeast management
  • Cost management
  • Tax-related topics
  • Sales
  • Business development

The program also includes preparation for the internationally recognized Cicerone® Certified Beer Server certification, designed to strengthen professional knowledge related to beer handling, service and culture.

Through this comprehensive approach, the training initiative moves from strengthening technical and production knowledge to professional service, certification and business development.

Coordination between CCDER and local producers will continue throughout the coming months to ensure that each training session has a practical application within participating breweries and contributes to the growth, professionalization and long-term development of Playas de Rosarito’s craft beer industry.
